Butter Frosting

Ingredients: Makes enough to cover one 23 cm / 9 in cake
50g/2 oz butter or margarine, softened
250 g/9 oz icing (confectioners’) sugar, sifted
5 ml/1 tsp vanilla essence (extract)

30 ml/2 tbsp single (light) cream

Method:

Cream the butter or margarine until soft, then gradually blend in the sugar, the vanilla essence and cream until smooth and creamy.
