 Chicken Biryani

Ingredients:
Chicken 1, 1/4 kg
Rice 1 kg
Ginger Garlic paste 2 tbsp
… Salt as per taste
Onions (finely Sliced) 3 medium
Tomatoes (sliced) 6 medium
Yogurt (whipped) 1 cup
Cumin Seeds 1 tsp
Turmeric Powder 1 tsp
Red Chilli Powder 2 tbsp
Coriander Powder 1 tbsp
All spice Powder 1 tbsp
Green Chillies (chopped) 6-8
Fresh Coriander (chopped) 1/2 bunch
Mint Leaves (chopped) 1/2 bunch
Whole all spice 2 tbsp
Yellow Food Color 1/2 cup
Milk 1/2 cup
Kewra Essence a few drops
Cooking Oil 1 cup

Method:
1.In a pot, heat cooking oil on medium heat for 3-5 minutes and add whole all spice to it.
2.When it pops, add onions and stir fry till golden.
3.Add ginger garlic paste, turmeric and cumin and stir for 2-3 minutes.
4.Add tomatoes and cook till tender.
5.When the tomatoes form a paste, add chicken with salt, red chilli powder, coriander powder and all spice powder.
6.Add yogurt and mix well.
7.Cover and cook on medium heat for 12-15 minutes.
8.Then add green chillies, fresh coriander and mint leaves, stir and turn off the heat.
9.Parboil rice with some whole all spice and drain the water.
10.In a large pot, layer the chicken curry and cover with rice.
11.Sprinkle milk mixed with food color and kewra essence.
12.Cover and simmer on a hot griddle on low heat for 15 to 20 minutes.
13.Serve hot with salad and raita.
