Chicken Noodles Recipe

Ingredients listed will make 2 sizeable portions of sautéed Thai chicken noodles.

3 tablespoons of vegetable oil

½ lb of fresh rice noodles

½ cup of sliced preserved squid

1 tablespoon of chopped garlic

1 tablespoon of soy sauce

1 tablespoon of oyster sauce

1 teaspoon of chopped fresh chili

2 eggs

2 tablespoons of chicken stock

2 tablespoons of preserved radish

1 teaspoon of sugar

Green leaves lettuce


Marinated Chicken

½ cup of sliced chicken

1 tablespoon of soy sauce

1 tablespoon of oyster sauce

½ teaspoon of ground pepper

1 tablespoon of cornstarch

1 egg white

1 teaspoon of sugar


• Marinate the chicken with soy sauce, oyster sauce, egg white, pepper and cornstarch around 30 minutes.

• Place the oil in a frying pan or wok on medium to high heat.

• Sauté the garlic in the oil approximately 1 minute.

• Cook the chicken with the mixture until well done.

• Then, add the preserved squid and noodles and sauté about 2 minutes.

• Add eggs and all the remaining seasonings (soy sauce, oyster sauce and sugar).

• Combine and stir until well mixed together about 2-3 minutes.

• If the noodles are still quite dry, add some extra chicken stock.

• Serve hot on the lettuce and sprinkle with fresh cilantro for best flavor and presentation.

• For a more adventurous palate, I recommend adding sriracha hot sauce to increase the spiciness of this noodle dish.
