 Chicken Qeema Pulao by Chef Shireen Anwar

Ingredients

Chicken mince 250 gm
Rice soaked 250 gm
Oil ¼ cup
Onion 1 sliced
Salt 2 tsp
Chili powder 1 tsp
All spice 1 tsp
Turmeric ¼ tsp
Yogurt ½ cup
Cumin seeds ½ tsp
Ginger garlic paste 1 ½ tsp
Whole mix spices 1 tbsp
Green chilies 3
Mint leaves 2 tbsp
Coriander leaves chopped 2 tbsp

Method

Boil 250 gm rice with 1 tbsp whole spices and 1 tsp salt till ¾ done, drain rice and keep aside. Heat ¼ cup oil, add 1 sliced onion, fry till light golden, add 250 gm chicken mince with 1 tsp salt, ½ tsp cumin seeds, 1 tsp chili powder, ¼ tsp turmeric and 1 ½ tsp ginger garlic paste, fry for 5 minutes, add ½ cup yogurt and 1 tsp all spice, mix well, now add the boiled rice to this mixture, mix well, add 3 green chilies, 2 tbsp mint and 2 tbsp coriander leaves, leave it on dum for 5 minutes, serve hot.
