Creole macaroni By Zarnak Sidhwa Creole Macaroni By Zarnak Sidhwa

2 cups macaroni, boiled
2 tbsp oil
1 onion, chopped
2 green chilli, chopped
1 capsicum, chopped
4 cloves garlic, chopped
1 stalk celery, chopped
1 zucchini, chopped
½ tsp oregano
3 tomatoes, pureed
1 tbsp thick tomato puree
½ tsp salt
½ tsp black pepper, crushed
2 tbsp parmesan cheese, grated
2 tbsp parsley, chopped

Heat oil add in onion, green chillies, capsicum, garlic, celery,
zucchini and sauté, add tomatoes and tomato puree, let cook, season with
salt and pepper and add in the boiled macaroni and mix lightly. Sprinkle
parmesan cheese and parsley chopped.
