Ingredients listed will make 2 sizeable portions of spicy sautéed Thai noodles.

3 tablespoons of vegetable oil

1/2 lb of fresh rice noodles

1 cup of chicken

1 tablespoon of chopped garlic

1 teaspoon of chili paste

1 teaspoon of soy sauce

1 tablespoon of oyster sauce

½ tablespoon of sweet soy sauce

½ teaspoon of sugar

1 teaspoon of chopped fresh chili

15 Thai basil leaves

¼ cup of baby corn

¼ cup of carrot

¼ cup of red bell pepper

¼ cup of sliced onion

2 tablespoons of chicken stock

Place the oil in a frying pan or wok on medium to high heat.

Sauté garlic and onion with the chopped chilies and chili paste for approximately 1 minute.

Cook the chicken with the mixture until well done.

Then, add the baby corn and bell pepper and sauté about 2 minutes.

Add the noodles and all the remaining seasonings (soy sauce, oyster sauce, sweet soy sauce and sugar).

Combine and stir until well mixed together about 2-3 minutes.

If the noodles are still quite dry, add some extra chicken stock.

Add the basil last and cook for about 1 extra minute.

Serve hot and sprinkle with fresh basil for best flavor and presentation.
