Hot Tea Fruit Cake

Ingredients: Makes one 900 g/2 lb cake
450 g/1 lb/2½ cups dried mixed fruit (fruit cake mix)

300 ml/½ pt/1¼ cups hot black tea

350 g/10 oz/1¼ cups soft brown sugar

350 g/10 oz/2½ cups self-raising (self-rising) flour

1 egg, beaten

Method:

Place the fruit in the hot tea and leave to soak overnight. Stir in the sugar, flour and egg and turn into a greased and lined 900 g/2 lb loaf tin (pan). Bake in a preheated oven at 160°C/325°F/gas mark 3 for 2 hours until well risen and golden brown.
