 Khatta Meetha Achar By Chef Rida Aftab

Ingredients

Mustard oil 1 kg
Lemon 250 gm
Carrot 250 gm
Garlic (peel) 125 gm
Jaggery 50 gm
Green chilies 100 gm
Mustard seeds 1 tsp
Onion seeds 1 tsp
Fenugreek seeds 1 tsp
Fennel seeds 1 tsp
Crushed red pepper 1 tbsp
Turmeric 1 tbsp
Salt 1 tbsp

Method
• Wash 250 gm lemon, 100 gm green chilies. 250 gm carrot and 125 gm peeled garlic cloves. Now cut into thin long piece and dry.
• Marinate all the vegetable with 1 tbsp turmeric powder and 1 tbsp salt. Put in a strainer.
• Keep it in air to dry well.
• Cook 1 kg mustard oil and keep aside to cool.
• Coarsely crush all together 1 tsp mustard seeds, 1 tsp onion seeds, 1 tsp fenugreek seeds, 50 gm jaggery and 1 tsp fennel seeds.
• Add crushed seeds to the vegetable and mix well. Put in a jar. Top with mustard oil.
• Cover with a muslin cloth; keep in sun light for a week.
• Achar is ready to serve.
