Laab Larb

Ingredients listed will make 2 sizeable portions

½ lb of ground pork

1 chopped green onion

1 tablespoon of ground roasted rice

¼ cup of red onion

1 chopped cilantro

½ – 1 cup of chicken stock

2 tablespoon of fish sauce

2 tablespoons of lime juice

½ teaspoon of sugar

1 tablespoon of ground red pepper

¼ cup of mint leaves

2-3 cabbage leaves

Larb Directions

• To make roasted rice, add 2 tablespoons or more of rice to a skillet and stir over low heat until golden. Then, add the cooked rice to a blender to make to ground roasted rice. You can save the rest for next time.

• Add the chicken stock to a deep skillet over medium heat and bring to boil.

• Add the ground pork to cook in the skillet until it is well done. If it is too dry, feel free to add more stock to rehydrate it.

• Transfer the cooked meat to a small bowl. Then add the lime, the fish sauce, the sugar, the roasted rice, the red onion, the green onion, the mint leaves and the red pepper and mix well together. Taste your salad and alter the ingredients to suit your preferences.

• Pour on a nice plate, serve with cabbage and sticky rice.
