Mass Massaman Curry


This recipe makes 2 nice sized servings.

4 chicken drumsticks

1 cup of coconut milk

2 tablespoons of massaman curry paste

¼ cup of peanut

2 potatoes (peeled and diced)

2 onions (cut in quarters)

1 tablespoons of fish sauce

½ teaspoon of salt

1 tablespoon of tamarind paste

2 tablespoons of palm sugar

1 cinnamon stick

1 teaspoon of cardamom pods

2 bay leaves


• Combine massaman thai curry paste and coconut cream (the thick, creamy part in the can) over medium heat, stirring constantly until brought to boil

• When you see the oils coming off the sauce, put in the drumsticks and stir to cook the chicken in the sauce.

• After the chicken is brown, add the entire remainder of coconut milk to the pot and lower the heat to low.

• Add cinnamon sticks, bay leaves, cardamom pods and simmer about 30-40 minutes until the chicken is softer.

• Add tamarind paste, palm sugar, fish sauce and salt to season the curry.

• Continue to simmer on low heat about 15-20 minutes.

• Remove from the stove and serve with steamed rice or bread.
