Ingredients listed will make 2 nice sized servings of sautéed Thai noodles.

125 grams of fresh wide rice noodle

1 cup of sliced chicken

1/2 lb of Chinese broccoli (Peel the tough stems and cut into 2 inches) or cut regular broccoli

2 tablespoons of vegetable oil

2 tablespoons of chopped garlic

2 eggs

½ tablespoon of yellow bean sauce

1 tablespoon of sweet soy sauce

1 teaspoon of sugar

1 tablespoon of oyster sauce

1/8 cup of chicken stock

Red chili pepper (optional)

White pepper (optional)

Vinegar (optional)

• Turn on medium high heat and put the oil in the frying pan.

• When the oil starts to warm up, add the garlic and stir-fry until golden brown, usually about 2 minutes.

• Stir continuously to avoid burning the garlic and making it bitter.

• Cook the eggs until they are well done, then remove from the pan.

• Add the sliced chicken and sauté until the chicken cooks through completely.

• Add the broccoli and cook until the vegetable starts to get soft.

• Put in the noodles and combine with the cooked eggs, yellow bean sauce, sweet soy sauce, oyster sauce, sugar and chicken stock and stir fry until soft and well cooked, about 3 minutes.

• Sprinkle with white pepper, red chili pepper and vinegar, to taste.

• Feel free to add only minimal flavor seasoning for a mild palate or go wild and try to up the heat for a real authentic Thai food experience!
