Pineapple Fried Rice

PineFR Pineapple Fried Rice

Ingredients for 2 servings

4 cup of steamed rice

½ lb prawns (cleaned and veined)

½ cup of pineapple chucks

¼ cup raisins

¼ cup of red bell pepper (finely chopped)

¼ cup carrots (finely chopped)

¼ cup of onion (finely chopped)

¼ cup of green onion (chopped)

2 cloves of garlic (chopped)

2 eggs

2 tablespoon of thin soy sauce

1 teaspoon of sugar

1 teaspoon of salt

½ teaspoon of pepper

1 teaspoon of curry powder

2 tablespoons of vegetable oil


• Add oil to the deep skillet over medium heat. Wait about 1 minute until the oil is hot, then put garlic and onion in the pan and stir fry until fragrant.

• Add egg to the skillet and scramble until cooked. Put bell pepper, carrot and shrimp and stir fry for 1 minute.

• Add pineapple, raisin, green onion and rice. Sauté to cook thoroughly.

• Season the rice with soy sauce, sugar, salt, pepper and curry powder blended well together.

• Transfer fried rice onto a plate. You can decorate your rice with sliced cucumber and sliced tomato.
