Plain Yoghurt Cake

 Plain Yoghurt Cake

Ingredients: Makes one 23 cm/9 in cake
150 g/5 oz plain yoghurt

150 ml/¼ pt oil

225 g/8 oz/1 cup caster (superfine) sugar

225 g/8 oz/2 cups self-raising (self-rising) flour

10 ml/2 teaspoons baking powder

2 eggs, beaten

Method:

Mix together all the ingredients until smooth, then spoon into a greased and lined 23 cm/9 in cake tin (pan). Bake in a preheated oven at 160ºC/325ºF/gas mark 3 for 1¼ hours until springy to the touch. Leave to cool in the tin.
