Squash Dessert Ingredients for 2 Servings

½ medium butternut (clean and cut in pieces)

1 cup of coconut milk

1 piece of palm sugar (circle shape)

½ teaspoon of salt

1 pandan leaf

lime

Squash in Coconut Sauce Directions

• Cut the butternut in half, get rid of the seeds and then cut the squash into small pieces. Soak the squash in water with lime (to prevent if from getting dark) for 10-15 minutes. Then, drain and rinse to clean. Put aside.

• Add the coconut milk in a deep large skillet over medium heat and bring to boil.

• Add the palm sugar, pandan leaf and salt in the skillet. Keep stirring until the sugar and salt are dissolved.

• Add the cut butternut to cook in the coconut sauce for 10 minutes. (If you like it softer, leave for 5 more minutes.)

• Let it cool down to serve warm.
