STIR FRY WHITE EGG PLANT Stir Fry White Egg Plant By Chef Gulzar

Ingredients:
Egg plant ½ kg
Ginger garlic paste 2 tbsp
Onion (chopped) 1
Tomatoes 2-3
Tamarind paste ½ cup
Tomato puree ½ cup
Red chili (crushed) ½ cup
All spice powder ½ tsp
Cumin seed (roasted & crushed) 1 tsp
Mustard seeds (roasted & crushed) 1 tsp
Green coriander ½ bunch
Green chilies 6-8
Oil 4 tbsp
Salt to taste

Method:
Take 4 tbsp oil in a pan and heat it, fry one onion in it. Sauté 2 tbsp garlic paste in it, then add ½ kg egg plants in it and fry. Now add 1 tsp crushed red chili, ½ tsp All spice powder, 1 tsp roasted and crushed cumin seeds, 1 tsp roasted and crushed mustard seeds, salt, ½ cup tomato puree, and 2-3 tomatoes in it and mix it well. Add water as required to cook eggplants. When oil separates then add ½ cup tamarind paste, ½ bunch green coriander and 6-8 green chilies in it. Mix it and simmer. Once ready dish it out and serve.
