Sugar fruit pan cakes by Chef Shireen Anwar

Eggs 2
Butter 1 ounce
Milk 3 ½ ounce
Flour 3 ½ ounce
Baking powder 1 tsp
Vanilla essence ¼ tsp
Caster sugar 2 tbsp
Dry blueberries 3 tbsp


Separate 2 eggs. Mix together 3 ½ ounce milk and 1 ounce melted butter and mixed with egg yolks, put the 3 ½ ounce flour, 1 tsp baking powder and 2 tbsp sugar in a large bowl, add milk mixture and beat well to make a smooth batter, stir in the 3 tbsp blueberries and ¼ tsp vanilla essence, heat a little oil in a large frying pan for 1 minute, add a small amount of batter to one side of the pan, so its spread to make a little pan cake, add 2 to 3 more pan cakes when they are golden on one side, flip over and cook again until golden, remove pan cake from frying pan, sprinkle with icing sugar and serve immediately.
