1 cup of chicken breast (sliced)

½ cup of steamed broccoli

½ cup of steamed spinach

2 tablespoons of water

Chopped scallion for garnish

Peanut Sauce Ingredients

1 tablespoon of red curry paste

½ cup of ground peanut

1 can of coconut milk

1 tablespoon of sugar

1 tablespoon of fish sauce

1 cinnamon stick

½ cup of water


• Add coconut cream to a saucepan over medium heat. After the cream is warm, add the curry paste to stir fry for 1 minute.

• After you see red oil is separating from the cream, add the rest of the coconut milk and water into the saucepan.

• Add sugar and fish sauce to season the mixture and combine well. Bring to boil.

• Lower the heat to low, add the ground peanut and cinnamon stick. Keep stirring and simmering until the sauce is thick. It should take around 30 minutes. Then, remove from the heat and be ready to stir fry with the chicken.

• In a large skillet, add ½ cup of peanut sauce and the sliced chicken over medium heat. Stir the chicken in the peanut sauce until the meat is cooked thoroughly. If the sauce is dry, add water to the skillet.

• Turn down the heat to low, keep simmering the chicken for 10 minutes.

• Remove from the stove, transfer to a plate over steamed vegetables, sprinkle with chopped scallions and serve with hot jasmine rice.

• Time to eat!
