Shrimp Salad Thai Shrimp Salad

Thai Shrimp Salad Ingredients

Ingredients listed will make 2 sizeable portions

1 cup of shrimp (peel, keep the tails and de-vein)

1 tablespoon of chopped garlic

1 chopped cilantro root

¼ cup of sliced red onion

¼ cup of chopped lemongrass

1 tablespoon of chopped green onion

1 teaspoon of shrimp paste

1 tablespoons of chicken stock

2 tablespoons of fish sauce

2 tablespoons of lime juice

1 tablespoon of palm sugar

2 tablespoons of chopped fresh chili

3 leaves of iceberg lettuce (cut)

1 tablespoon of chopped cilantro

3 cups of water

Thai Shrimp Salad Directions

• Add the water to a large skillet and bring to boil. Then, add the shrimp to cook quickly. (When you see shrimp start to turn pink, they are cooked)

• Combine the chopped garlic, the chopped chili, the chopped cilantro, the fish sauce, the palm sugar, the lime juice, the shrimp paste, the lemongrass and the chicken stock in a large bowl. Taste your dressing and don’t be afraid to adjust to suit your palate.

• Add the cooked shrimp, the onion and the chopped green onion in the dressing bowl and toss to mix well.

• Add the cut lettuce to a nice plate and transfer your mixture on top of the lettuce.

• Ready to serve!
