 Tomato ketchup By Chef Shireen Anwar

Ingredients
Red ripe Tomatoes 2 ½ kg
Onion 1 coarsely chopped
Ginger 2 inch piece coarsely chopped
Garlic 4 cloves
Cinnamon 1 inch stick
Black pepper 6
White cumin 1 tsp
Cloves 4
Black cardamom 2
Brown vinegar 1 cup
Sugar 250gm
Salt 1 tsp
Chili powder 1 tsp

Method
Wash tomatoes well cut into thick cubes, put in a pan cover and cook without water, remove, sieve well discard the seeds peel, make a spice bag with chopped onion, chopped ginger garlic, cinnamon stick, black pepper, cumin seeds, cloves and black cardamom, add this spice bag to the tomato pulp with vinegar, sugar, salt and chili powder, cook for at least 20 to 25 minutes till ketchup thick, remove and discard the spice bag, fill ketchup in sterilized bottles.
